
OVEN ROASTED VEGETABLES
1 red bell pepper, cut into 1" pieces
1/2 sweet onion, cut into wedges
2-3 zucchini, cut into thirds then quartered
1 cup baby carrots, or sliced carrots
1 garlic clove, minced or pressed
1 Tbsp. olive oil
1 tsp. salt
1/2 tsp. pepper
Preheat oven to 425 degrees. Line a cookie sheet with aluminum foil. In a large bowl, toss together all ingredients. Spread veggies in an even layer on cookie sheet. Roast for 15 minutes or until zucchini is tender.
